Insuring modified cars

Insuring modified cars
So I've been shopping around lately I'm pretty
about the reviews I'm finding on the companies that offered me the best rates. Currently taking it in the butt from Farmer's for $146/mo for my 2 cars. I've been quoted $98/mo by Allstate and $106/mo by State Farm, and they also have the best extras. Allstate's "no racing application parts covered" clause has troubling reviews online while State Farm is supposedly better on this, but won't use OEM parts in repairs unless you pay the cost difference, which can add up to a good amount. I know if I declared my parts neither would be willing to cover me ($35k in mods...may be upped a few more grand shortly, and I'd want $10k over KBB if my car got stolen or totaled). Thus is my dilemma, pay less and hope nothing happens to the mods on my WRX or get a slightly less hassling insurer who can cost me a pretty penny in the case of an accident. Allstate $2,500 in unstated coverage (I have that in parts they will cover) while State Farm covers $5,000 (this definitely sounds wrong though). I've tried calling a collector's car insurance company (Grundy) and they won't cover me because my WRX isn't a "collector's car" despite all the work.
Any advice? Who are you insured by?

I used Esurance for the last 7 years and had a $10k "aftermarket parts" coverage on top of my liability/colision for my old '06 WRX. When I totalled the car I got that entire amount paid out, but obviously the claim review process took a while even though I kept every scrap of paper possible related to the work done. It didn't cost me that much more extra per month (~$20ish?), but at that time I also had multiple cars, drivers and homeowners policies stacked together.
However, this was all waaaaay before Esurance became an "Allstate company". I don't know how that partnership is structured and is that coverage is still offered (too lazy to log on and play around with my account).
That said, I am not sure there will be any insurance company that will touch $35k+ of modifications on what basicaly is an econo-box Imprezza with hot mustard up its bottom
The potential liability is too great, the needed premium will be sky high and the market isn't really there. Just because you spend $35k on a $25k car, does not automatically make it a $60k car. How many people sell their RSTi and JDM swapped cars here for nowhere near what it cost them?

Unfortunately I don't have the reciepts to everything on the car as I've had it for 9 years and have had some of the mods for 10. Also a lot of the receipts simply exist as vague Paypal emails with no content beyond "you have sent $xxxx to XYZ@yahoo.com".
@LxJLthr, I'm well aware of that. If I had an amount to insure it for, it would be $17-18,000, not $60,000.

Mods are in my i-Club garage. I won't be able to declare my mods because any standard insurer would probably deem me too high risk half way down my mod list. Unless I can find a good collector's car insurance for my WRX, I will have to go off what's normally covered.

That's why I'm parting her out & car already sold. Tired of dealing with this. Geico covered my Tein coilovers only because I was 100% not at fault. A lot of the time the at fault party will say "the insured policy doesn't cover that." I went around & around for months with the other insurance company until my insurance (Geico) stepped in to pay for it, after twisting their arm too. I never had more than a couple grand in mods so never thought about asking details but either way insurance on modded cars is a pain in Cali.
