The tech told me if I put a cat-back exhaust on it would not void my warranty however, messing with the cats definitely will. Is a cat-back system just for sound or will it provide an increase in power? Everyone seems to stress the importance of the up-pipe.
Cat back is fine. Messing with your up and down pipes is not a good idea though if you value your warranty. Subaru is within their rights to deny you for sertain things if you replace them. So far though it sounds like this dealer, or at least this tech, are reasonable about mods. I'd just go with what they say.

Yes, your exhaust and hangers are no longer warranted. But the rest of the car is.
