3" (over 2.5") on any current Subaru factory turbo FTW!

Back pressure does not increase torque or power. If it does, the engine needs tuning.

I voted for 3" because you have more options. There aren't very many 2.5" DP's to choose from, and if you ever want to upgrade to a big turbo, you'll need more flow. If you plan on sticking with the stock turbo, 2.5" provides plenty of flow.
