shuddering at full boost (cobb stage 3) seeking advice/thoughts on trouble shooting

Yep sounds like you found the culprit. Pick one up from a 2.0L wrx. The 2.5's have a shorter boot to compensate for the different heads.

Thought u told me u swapped new plugs and coil packs in? I said coil packs that night lol.

Did I? Sorry man I may have misspoken. I changed only the coil packs. I had the originals go bad once already and swapped them out with some used ones I got from a fellow enthusiast.

Now I only get that blinking cel on full boost from the one bad coil pack. Driving normally, I have no cel, no sputter, no funky noises. Would I do any harm if I drive the car til I can get some new coil packs?
