You can't do that without modified caliper brackets. Have you already found some (which should specifiy what size rotor to use) or do you plan to make your own brackets?

1. Moving the caliper out significantly increases brake torque per fluid input which can limit your modulation range and potentially radically upset the front to rear bias with poor results. If you do do a rotor upgrade, some changes to keep the rears up with the fronts is going to a requirement just to maintain stock performance. You have more chance of decreasing performance than increasing it unless a lot of work has gone into the design.
2. Increasing the diameter of a rotor without increasing its thickness leads to a rotor with poor structural integrity. Definitely wont work under track conditions. And if youre not gonna track it, you dont really need a bigger rotor.
