We complied a few price sheets that detail our experieces with an RS-T and a WRX conversion. I know , we haven't done a n/a pricesheet yet... but here's just some extra info for you to take into consideration.
Keep in mind, prices have change but the reality has not. Reliabilty and smog legal = conversion. That just can't be beat.

Edit: (for the WRX swap) Would it be possible for a professional to install the Wiring and I self install the rest of the stuff? I have all the knowledge to do all of it including the wiring but I dont know if I would trust myself/have the time to do that.

It shouldn't be an issue to hire/contract a professional just to do the wiring for a conversion. I know we have completed a few conversions, wiring only, that way.
