You should have to use a wrench. If you do, loosen only. Lubricate to o-ring, screw it on til it's snug then tighten half a turn, by hand. Next time you take it off, you'll be able to remove it with a gloved hand.

If you need to use a oil filter wrench then you need to stop working on your car.
to properly install the oil filter lube the o-ring with oil spin the filter on till the o-ring seats and give a extra 1/4 turn that is sufficent to seal it, no need to torque it down with a wrench.
to remove it a rubber glove on your hand should be plenty to break it loose.
