Minerals may be good for you but they're not good for your cooling system. May be no harm done depending on what is actually in that water and how much, but the best thing is to use distilled water as specified. If you want to be certain this won't cause any problems then drain it and refill it again with the right stuff.

maybe im just ignorant but whats the reason for mixing water and coolant and not just putting in straight coolant

Water is actually more efficient for heat transfer than antifreeze. A system filled with pure antifreeze wouldn't cool very well. The antifreeze is necessary to lower the freezing point and raise the boiling point of the coolant, as well as for the anticorrosion additives, but for proper cooling system operation you don't want to go over a 50-50 mix.
