It's ok to shift without engaging the clutch?

It requires a fair bit of practice, and is best learned on someone elses transmission. Even done properly, it's not necessairly good for your syncros or tranny.
I find it actually easier when downshifting, but I can pop it into gear on upshifts too. Also while used with normal clutching, rev matching is in theory even easier on the clutch/tranny as the flywheel is spinning at a more similar speed as the driveline at engaugement.

*sits back and waits for someone to tell him hes going to destroy his transmission, clutch, flux capacitor, etc etc.*

im not sure the flux capacitor is in any way linked to the transmission... i think it is part of the exhaust system, like a space time continueum version of a turbo.

I do that myself when exiting the freeway for the same reasons you mentioned.

In addition, if I'm about to come to a stop light and it suddenly turns green, I double-clutch it into first so as to not beat-up the synchro. Makes it much easier to get the lever in engaged, and helps alleviate grinding.

the only way to engage the clutch with your heel on the floor is if you had a roller on the clutch pedal that would allow your heel to be the stationary pivot point on the floor. im pretty sure everyone has there foot off the ground.

It's pretty fun to learn, but just takes lots of practice. It's pretty sweet when you start getting able to pull it off. A loud exhaust really helps the learning process.
