Nijiya or Mitsuwa has pretty good fish besides their maguro. Real fresh maguro needs to be bought at a commercial fish market. Also, when preparing the direction of cut makes a huge difference in mouthfeel. If you need any tips LMK, before I went to Japan to teach English I worked in a japanese restaurant as a cook/kitchen helper while going to school for 2 yrs to practice Japanese.

Id' say all 4 (marukai, nijiya, mitsuwa, suruki) are of fair quality and freshness with the edge going to nijiya. The only think you'll almost always finding yourself disappointed in is the maguro. It's that light pink frozen dyed bull****.

So a japanese coworker told me if I'm going to go to Nijiya, go as early as possible, and run straight for the sashimi when it opens.
She was not lying. That place is a damned zoo!
