Where to adopt a dog?
Drove a loop around the Bay Area today, and it seems like all the shelters are full of nothing but pits, and chihuahuas. I've got nothing against pits, but it does limit your options when moving. And chihuahuas are out.
Any shelters with a good selection of medium to medium-small sized dogs? Actually saw one dog that might work at the SF SPCA, but I've been told their adoption process can be really rigorous.

Try this website. It will locate which dogs are at which shelters. And you can even search by breed.

If you are looking for a particular breed you can always try the breed-specific rescues.
Here is a good place to start: http://www.akc.org/breeds/rescue.cfm

+1 for petfinder, but depending on if you're looking for something specific, you might have to road trip a bit.
I got my guy out of Grass Valley for $5 (lab/rott mix....see photo I just posted in '2010 pics of yourself' thread)

We got one of ours from Pets In Need on the peninsula. We found another feral and the third we got from an adoption drive at Petsmart.
We recently visited Silicon Valley Humane Society and I noticed a similar thing to you - several Pits and lots of Chihuahuas. Obviously people are wary of adopting Pits. I think Chihuahuas are being overbred by local puppy mills.
One of ours is a Jack Russell/Chihuahua mix (12 lbs), one is Spaniel/Retriever mix (16 lbs), and the third (recently deceased) was a Maltese (5lbs).
Keep looking and the right dog will be along.

Petsmart has had a bunch when I've been there and they have lowered their adoption fee, was 15$ for adult cats down from 75$, since the pounds have been putting down a lot more recently and the more that get adopted the more they can save. Most have adoption days weekends from 12-4pm otherwise they just have cats.
