Here are a few things:
Helmet
Portable chair
Tire pressure gauge
Lots of water/snacks
Appropriate clothing (for weather/condition/etc.) - plan accordingly
Small tool set (doubt you would need this, but doesn't hurt)
Glass cleaner/towels/Rain-X (Rain-X is really useful if there is a chance of rain)
A BIG plastic tub to put that stuff in (this helps with the rain also)
That's to start. If you are going with friends, might want to touch base with them and divide and conquer. I.E. One friend brings a case of water. One friend brings the camping chair, one friend brings the tool set, etc.

If there were one change I wish I'd made before my first track day (Laguna) it would be fluid. I had some fade and the stock fluid was nasty when I replaced it.
Ran Thunderhill after changing to RBF600 (and RB slotted front rotors, and CL RC5+ pads) and brakes were strong all day, with a lot of track time.
