Highway 160 can be a cool drive through the Delta, not sure about pavement, I haven't been out there in 7 yr or so.
From Antioch bridge to Sac
Bolinas Rd from Fairfax up and over Mt Tamalpaias to Stinson Beach is nice too, but full of bicyclists and hikers and the like.
An out-of town drive could be up in the Mother Lode country: take Highway 4 thru Copperopolis up into Angel's Camp to highway 49, then take 49 south as far as you want. You could run it all the way to Fresno and take some remote, straight line farm roads back across the valley @ 100mph +
A drive I want to take is the (now paved) road out of Oroville up to Buck's Lake, near Quincy. When I used to live up in Quincy, that road was dirt, but my friend tells me it is brand new pavement, like glass. Too bad it is 3 hr away just to get there.

For the guy asking I'll put in another vote for going up Mt. Hamilton and then back down to Mines Rd. through Livermore, then take either 84/Niles or 84->Calaveras Rd. back to Fremont area.
