My Japanese friend always grates up some apple and adds a bit of honey into the curry sauce when she cooks it.

I used to do that along with the meat, but it didn't make too big a difference once in the curry since the roux is so thick (I usually add less water than recommended).

However, when I make Thai curry, I'll use coconut oil to fry up the paste first before adding the coconut milk.

And I always julienne my onions instead of dicing them.

Apples in curry... I've ALWAYS hated that...

That being said, apples and honey in curry always reminds me of House Vermont Curry ads...
