Try cutting/mincing the onions up and stir frying it with a decent amount of oil till they are brownish (but not burnt!), THEN you dump it into the curry

However, when I make Thai curry, I'll use coconut oil to fry up the paste first before adding the coconut milk.

And I always julienne my onions instead of dicing them.

Apples in curry... I've ALWAYS hated that...
