2 hands here and I think I know why.....Not only is it safer.....but i've noticed since i've been doing lots of track events that I have more confindence & control when making tiny adjustments at high speed!! Another thing i've realized is that my harnesses hold both my shoulders tight against the seat so i can't lean towards the shifter....and holding both hands directly in front of me on the steering wheel is comfortable and balanced!!
heh, i always try to keep two on now, I used to drive with my hand on the shifter like most guys but a few track days and you realise you should't drive like that.
It depends on my speed/intentions.
If I'm just driving up 880, left hand on the wheel with my elbow on the arm rest. My right hand is on the shifter with my elbow on the extended arm rest.
When I'm "going for it, my left hand is either on or just below the bulge on the left side of the top half of the steering wheel. My right hand will be on the opposite side when not shifting.
This is very different from how I drove a few years ago. It was always left hand on the steering wheel, right hand on the shifter.

2 hands most of the time (10/2) . Except in traffic, at that point I use my other hand to flip the guy that just cut me off. Or wave to other Subie drivers.
I try not keep my hand on the shifter in slow traffic (bad for the transmission).

I try to keep 2 hands on at all times, at around 9/10 and 2/3 o'clocks. When I was at Thunder Hill I always used this hand placement. Sometimes on the street I use the ol' 8 and 4 that someone else mentioned.
I do this for a few reasons:
- better control, the more hands the merrier
- with both hands up in front I am more apt to be alert. One handed driving is too relaxing. Maybe on I-5 in BFE I'd revert to one-handed driving consciously.
- resting a hand on the stick (yuk yuk) can wear on the transmission in some way, or so I've heard

It's funny. I always get a little worried when I'm riding with someone who's driving hard and they've only got one hand on the wheel. When I'm cruising around with my brother, I always take his hand off the gear selector(auto) and put it on the wheel for him. Needless to say, he gets super pissed. I figure someday he'll pick up on the fact that two hands should be used when driving, especially in an auto.

I believe resting your hand on the shifter at low speeds (or any speed that i've been told) puts extra wear on your synchros. The shifter shakes when you're driving, and with your hand on it, that vibration has to go somewhere.
I drive with 1h on the freeway at "legal" speeds, 2 if faster, 1 on the wheel in traffic, 2 if making a sharp turn during city driving.
2 when i'm really cookin', ofcourse.
