How Many Hands Do You Have on the Steering Wheel?
I have noticed in a lot of WRC videos I have and a bunch of track racing videos, that a lot of people drive with 2 hands on the steering wheel at all times. I have trained myself to always have only 1 hand on the wheel at all times. No matter where I drive. Up in the mountains, on the freeway and in the city. I have tried for the last few weeks to actually use 2 hands on the steering wheel, but its hard to re-learn. It is especially hard to turn with 2 hands on the wheel for me. I know its probably a bad habit, since you will have more control of the steering wheel with 2 hands. But I am trying to re-learn.

Any driving school from your local "how to drive for teenagers" to a full week of Tim O'Neill's rally techniques, as well as all the high performance track schools -
WITHOUT EXCEPTION- they are all going to tell you that you should have two hands on the wheel "at all times" with the understanding that you'll need to take one hand off to shift on occasion.
There might be some controversy as to whether "10 and 2" vs. "9 and 3" positioning, and some schools of thought differ on when to adjust the hand positions in a turn and little details like that, but you ain't goin' to find ANY professional driving instructor anywhere on the planet telling you it's OK to drive with one hand on the wheel as a general practice.
As for steering with the knees...... only while talking on the phone and simultaneously twisting up a burner.....

When I drove an auto, I use to drive with my right hand all the time. I even went so far as to drive with my right hand all the time without using my left
(that includes using the turn signals and stuff). I was that comfortable. Now that I have a manual, I've trained myself to use my left hand instead. Driving with my left hand on the steering wheel at all times is still uncomfortable, especially high speed freeway runs even with easy turns. But eventually you get used to it driving normally. As you said, practice makes perfect

i have this exact same problem. i would put both hands on the wheel, only to notice 5 minutes later that my right hand is either resting on my arm rest or on the shifter...
