When driving a rally car you really do need both hands on the wheel, theres just too much going on, and those cars are extremely sensitive to responce so one handed would nuts...
If your car really has a soft control that can drive easily with one hand like the WRX, its really not hard to go driving around rather agressivly with one hand. But I say keep both hands on the wheel unless your are shifting or are going straight on a freeway for ages and you need to rest your arms
A good thing to get if you want to retrain yourself might be some steering rack bushings. Those increase the steering input to the wheel and will require you to keep your hands on the wheel more often to keep control, I think that might help (and its not expensive either)

When I'm just cruisin'...left hand on the steering wheel, right hand flippin' through the stereo. When driving aggressively (especially through Highway 17), two hands just to have more control over the car.

I have fired people for driving with one hand.
But other than that I use two hands most of the time, but I am a smoker so on occasion (I think thats an understatement) I drive with one at 6 o'clock.
I have been known to be holding a soda, smoking a cig, tallking on the phone, lowering vol on stereo and shifting all at about the same time....so who knows...

2 hands - for when i shift...
I've noticed that when i drive fast, driving with two hands lets me be more precise and smooth with steering input, and when you follow the line, and brake and all that good stuff, you get faster... even though it doesn't seem faster.
