i'm chinese, but grew up in a vietnamese family, so i know both cultures fairly well. it's most likely what my2003wrx said -- ngow laam meen (NLM: beef tendon noodle).

there are a few vietnamese dishes that might be what you're asking about, but NLM is probably what you're asking about.

As for your noodle dish, I can think of a few variations: If it's the Taiwanese one that comes in red soup, it's hung siu ngau nam mien (that's "hoong syu ngau nam meen", roughly). If it's in clear or beef broth, it's just ngau nam ngau gan tong mien ("ngau nam ngau gun tong meen"). It's available at many Chinese noodle shops, not just Vietnamese pho shacks.
Just remember, ngau means cow/beef, ngau nam is beef brisket, ngau gan is beef tendon, tong is soup, mien is noodle, and hung siu is a particular cooking method.

Yeah what is it with the Cantonese "L" substitution for "N"? I could never figure that out.

It makes a huge difference in Japanese, but nobody seems to care in Cantonese.

You can also get the "funn" version if you like rice noodles, BTW...

I never notice that we can type chinese up here...tight....

anyway, here is the word that u have to remember, or write it down if u want to,

牛腩麵 = 牛 - ngow(COW Mu..../beef), 腩 - larm (stomach part, but not tendon!! ), 麵 - (noodle )

牛筋麵 = 牛 - ngow(beef... again), 筋 - gun ( tendon ), 麵 - (noodle)

anyway, where u lived near by?? haha, we can always gather up for some beef noodle, I'm always down for food.... wahaha...
