Light Truck/SUV tires...

Just wondering about something. Before anyone dismisses the idea or think I'm nuts, just hear me out. I know that the main concerns on tire fitment selections , are that they must meet the fitment issues (correct bead, width, etc...) for the rim and that the tire should meet or exceed the recommended load rating of the vehicle.
Understanding this, what keeps anyone from using a light truck/SUV tire on their subie *cars* (Forresters, Bajas, etc... do not count; thinking more like the WRXs, RSs, etc...)? It seems that the light truck/SUV tire selections appear to have more choices for off-roading than the regular car tire selections. I know that there are some gravel only tires and some M+S tire out there for our cars, but I was looking for something a little more aggressive than the typical M+S car tire, yet not as expensive or overly specialized as a dedicated gravel race tire. When looking for instance at the Tire Rack's selections for our cars, if I had a small pickup or SUV I would have more and seemingly better choices of tires for dual purpose off-roading to pick from than what is represented by the their 'car only' section.
