Do you need to cut into the trunk for a rear strut bar?

No, you don't need to, as long as you go with a brand-name or a direct replica of a brand name. The exception is the Cusco brace with the V-bar. That requires some cutting.

The rear will make more difference then the front. I certanly wouldn't say it's a very noticible difference on a stock car but depending on your suspension setup it can help. Especially on a wagon.
If you want to get the V brace you should do so, as long as you are comfortable with loosing a little bit of trunk space (not like most of us care anyway). It triangulates and helps further stiffen the rear. If you look at a picture of a EVO 8 RS trunk (or any newer EVO with the trunk lining removed i would assume) they come with a triangulated brace in front of the rear strut towers stock, so theres at least one example of an OEM applying this idea in a model. Aside from the tight space you have to get into to drill the 2 holes and making sure you drill correctly the first time it should be an easy install with any cusco rear bar. The only cutting I had to do on my GM6 was trimming the spare tire cover a bit to go around the brace mount, I decided to bolt the bar in over the trunk mat rather then cut it up since removing the carpet isn't really that big of a deal for me...
Both are nice mods to have and I wouldn't consider not doing them again if I had the chance...
