I am leaving for vacation tomorrow and not coming back until the 14th... My car will be in my parents garage the entire time but will not be driven or turned on... is that going to be a problem not having the car on then 7 days later turning it on? Is there anything that I need to do to prep the car or anything like that?
Thanks :-)

You won't have any problems if you don't run your car for a week.. It is longer durations that you need to worry about flushing systems, etc. One week is not a long time at all.
Have a good vacation.

From what I have heard I think you should just let the car sit with a full tank of gas. I've heard that one thing you want to try and prevent is the formation of condesate in the gas tank and having a full tank of gas helps prevents this.

How about 2 weeks? I'm going out of the country for two weeks and I wonder if it will be okay. Or should I tell my roommate to take it out for a drive once or twice during that time?

I work on the road and my cars often sit for weeks with out moving. The last time I got home my Bro had left my car outside for 5 weeks. Cleveland is not the place to let somthing sit outside in winter. The only thing I have ever seen is that the rotors will carode to the point that the breaks can lock on and you will have to break them free. This happened on my MR2 and I had to turn all the rotors. I am going to store the car in a climate controled warhouse from now on. you can buy a tent that is for climate controled that you drive your car into.
