I was thinking of doing the same with my outback sport- but after consideration, I realized that driving in sand is probably not good for the car (I've already replaced one wheel bearing)... If anyone knows otherwise, please let me know!
I've seen pictures of a 2.5TS going out onto sand. It seemed to fair alright.
But then again, I've seen pictures of a WRX totally stuck in the sand.
Be smart about it, and you'll probably be alright.

its all about the tires & ground clearance. If its hard packed sand like Dayton beach your good. Just have a plan to get un stuck. First rule of 4 wheel drive 'it will get you into more trouble than it will get you out of' I say go for it no matter what happens it will be a good story. I think you will be ok. go to the gallery and see what others have done.
It'll do great on the beach! Just air down (which I didn't) and keep your momentum up. I have the TS wagon that nKoan mentioned. It only has 160HP and it's got open differentials front and rear. No traction problems at all. In fact, I just installed a trailer hitch so I can pull a trailer onto the beach with my ATVs. I'll let you know how it does.
Sand will get everywhere, but most vital parts are well sealed. I have a strictly dune 4wd truck, and I've yet to get sand passed the seals of the wheel bearings. I checked the airfilter and ducting on the Suby after I got off the beach and it was sand free, so I'm sleeping okay at night.

I definitely wouldn't kick any sand up if you were to go on the beach. The RS and TS's lack the hoodscoop, which I'm sure is a great place to suck in some serious amounts of sand.

I have a 98 impreza L and I have taken it off road (in sand) and they are really fun to drive, but ya, I had to get my rear wheel bearings and seals replaced, and now my CV axles are going out.
