I made a booty mount with 2 square, aluminum dowels that I notched. For the WRX, it fits on the 2 steel rods that hold up the headrest. For the STI, the headrest doesn't adjust, so it won't work.
Track tested. It works, but it's still too unstable to be effective. I'm still working on it.
I don't have a picture right now, though.

i used to have it by the hard plastic visor above the rear view mirror. But can't get your cluster reading if you are interest in that. From what I've seen, mounting it between the two front seats is the best spot. You can't really see much on the cluster, but gives you a good sense of what you are doing during a turn. I would have a second camera by my feet to record the 'foot work'
I saw this site once that sold a little camera that you mounted anywhere on the car. A simple Ethernet cable ran back to the real video camera inside your car. I wish I could find the link again but I found it on a G35 forum. What was cool about it was that you didnt have to put your $1000 camera with some duck tape on the outside of your car. I'll keep looking.
I finally found the site. Its called a cone cam, and is used with your existing camera.

The cone cam is way cool!
I've gotten decent results strapping a tripod in the back seat, which is nice in that you get a view of some of what is going on in the cockpit,
also bungee cording the cam onto the dash, gives you more of a clear view of the road ahead, but for serious driving I think a more solid mounting scheme is going to be in order..
