mac mini is definitely an option...buy a small laptop with a broken LCD on ebay, detach the LCD unit, and then use it as your computer base...get a free battery back up too 
especially now since that pc card tv tuners are cheap

What it really comes down to is what you want to be able to do with it right now, and if that will change in the future. Answer those two question, then we (I, haha) can point you in the right direction. Oh, and pardon the salesperson in me, I did retail for a few years.

Something new from Jensen is supposed to be coming out in March or April.....pretty impressive looking setup....looks like it will run in the $3500 ball park...
Will try and get more info so you can see.
Includes alot for the price, but basically anything you would want in I.C.E. with GPS and FM tuner, Satellite ready, flip out LCD, Computer.

My car pc + radio head was under 1300$ installed (I did it myself)
including GPS, MP3, Internet Connectivity via EDGE, XM Radio, DVD, etc.
My next goal is to aquire a 5.1 channel alpine amp with optical inputs and use a highend sound blaster audigy card to run sound direct from my computer to the amp. Should be sick!

The $3500 price is for Korea I think, If not mistaken the price will drop considerably once it hits our shores. I have a friend that is looking at helping a friend of his startup as a Distributor.
