Over steer is something you do not want in racing. Should the car oversteer your off the racing line which is set.
Grip driving is faster than less grip driving. The only way you would break you're tires loose is either letting off the accelerator or way too much gas because your overdriving the rear tires.
Yes drifting tries to follow the ideal racing line in the video, how ever they scrub speed turning in and exiting the turn. Grip driving is about balance.
