i think it goes like this. Juan of the emperors (i'm fo-get which juan) liked to venture out of the palace from time to time to see what his kindom (outside of the palace) was actually like. He would dress as a commoner and go to town. One day, he stopped at a resteraunt where the workers recognized him, they were asked to no blow his cover. Upon being served tea the emperor wanted to say thanks, however, the rule of thumb is that the emperor thanks no juan... So, emperor made the kneeling thing with his knuckles (index and middle fingers) and tapped the table a couple of times... So now, the tapping is a way of saying thank you... at least that was the story someone told me, i could be wrong. Because before i heard the story, i always thought i was a way to say "when" to stop pouring..
