I think it's 1.75" on most stock Subys- that's what mine is. You will not ever need larger than a 2.25" unless you are getting a turbo. Exhaust is not about the volume of gasses you can pump but the velocity at which you can pump them away from the engine. Headers will do you the most good but for your wifes car, I would get a custom cat-back with something close to the stock muffler to keep it nice and quiet in the cabin. Anything else is going to increase inside noise past your typical "family" car's ideal limit.
I drive a pretty beastly all-motor DOHC Neon, so I know all about exhaust velocity.
I use 2-1/2" pipe on that car, and it's almost not enough. But that's because of the cams and the head.
But 1-3/4" piping...jeez. I'm pretty sure my old Accord came with at least 2", and that thing was a piece. Now...I would look at a stock system that size and suggest that the head doesn't flow so well, due to port sizes or valve count or something. Or a seriously mild cam. Whatever the case, I guess it's probably not that great of an idea to go larger than another 1/2" on an otherwise stock engine anyway.
