Skaggs spring road is amazing and its far away so people usually don't go there. Checkout the video i made on my last trip . It's a 12 min long video but worth watching if you are planning to go there it's so much fun driving there

Easily my new favorite: Hwy 20 to the coast from 101 (Mendocino)

84 to 1 (from Woodside).

All of Skyline.

Palomares Canyon Rd. is also a lot of fun in both directions.

Calaveras isn't the road...it is Felter up by the reservoir and I've driven it at least 1000+ times since I first got my license many moons ago.

Mt Hamilton Rd. was almost my back yard, so I've driven it hundreds of times also. Only taken it all the way out to Livermore once though. I normally just hit the peak and go back down.
