There is always skiing at Big Sky, but that's quite a side trip when you'd be going through Salt Lake otherwise, which has plenty of great skiing options.
Might just as well stick to I-80 and hope for good weather getting over the Wasatch, it'll be easily a day or two quicker.
True that- unless you want to rent a snowmobile you cannot get into the park at all.
