Decent sound bar, much better than TV speakers.

Look up Energy soundbars. They are everything you are asking for, and their parent company is Klipsch. Wireless subwoofer, amazing sound, and Bluetooth capable.

as for me, since Ive run all my entertainment off my computer through a 50" LCD w/TV tuner since since 2006 Im just using a 2.1 system that kicks ***. As was already stated, soundbars suck and are only really needed if you absolutely have no room for a decent 2:1 system.
Which means you live in a closet.

Heres what I run, this will kick the *** out of any under TV soundbar and its even cheaper than most of them. If you have room for a 50" TV you have room for this 2.1 over a soundbar!

I've run Klipsch before. I like their stuff.

I'd be curious to hear a side by side comparison with that sub against a decent sound bar set up. I have a hard time believing that it would outperform one that comes with a higher quality sub and more drivers.

I don't live in a closet but my TV might as well be in one.

That seems pretty cool. I'd be more likely to use that in the bedroom though.

I compared them at magnolia, and I ended up buying one for my parent's living room which is a 15x35' room, it fills that room with great sound quality! If you get a chance, check them out at best buy's magnolia high end dept. you won't regret it!

If I'm in the market for a good home theater system with a budget of about 2k, would it be better to get a really good 2.1 system + amp first and build off of that or get a decent 5.1 + amp?

They are pretty impressive. A buddy of mine had built a pair of the smallest ones and he brought them over a few years back. I liked them so much, I bought a full set and just recently upgraded to some newer ones from them.
