It's not really collecting, but I love roller coasters and amusement parks. I have been to several states to get on some incredible pieces of engineering. Every year, a bunch of coaster enthusiasts rank the top 50 steel and wooden coasters. I've gotten on at least half of them. My goal is to get on 500 coasters in my lifetime. I'm at 130 right now.

It's not my favorite, but it has the most impressive stats.
Top Thrill Dragster at Cedar Point in Ohio - 420 feet tall, it does 120 mph in 3.8 seconds, drop is 90 degrees and you do a 270 degree twist on your way down.

i collect shirts, mostly from woot.com because they're from many different artists and are usually limited.
i also collect ghetto blasters, i have 2 at the moment, haven't seen any good ones or been around a flea market for a while.
i also have a collection of iphone/ipod touch/general phone sized sleeves that i sew from various fabrics i've collected over the years(no homo)
hotwheels, JDM option DVD's and Best Motoring International DVD's, various random drifting and motorsports dvds. i also collect records, and Mighty Mugs(star wars ones)
i have Lando, Han Solo, Princess Leia and a bunch of other ones.
i also have a pretty small collection of coins, only the ones with my birth year or years that i find are significant to me.
i also collect sharpies of weird colors i find, and Pilot G2 0.38 pens, because i usually have a hard time finding them so i always have a few packs around my room.

Here is an old one that managed to stay in decent condition over the years, not sure how because some kid was riding it! I saw him at a spot a few years ago (around 2005) and I traded him a damn near new complete for it. Glad I did, it was one of my favorite graphics growing up....

I wouldn't consider myself a collector but I did save a lot of my old used boards from the 80's and 90's.
