Car Info: MY04 aspen wrx wagon.
SEM Texture for interiors. It's black, flat. Let it dry and hit it with 400 grit to make all the texture even. SEM Satin Black and then SEM Low Luster Clear Coat to seal it up. The texture will look PERFECT. Screw Rustoleum....

I think if I had a yellow bugeye I would do it yellow matching on the interior. Sorta how porsche will match the inside to the body..

paint... I just used dupli-color flat black.. sanded the pieces down with 400 grit then 600 grit to smooth it out then hit with a couple coats of paint.

Plasti-dip is great stuff.
Whatever you do choose to use, I have two VITAL tips:
1: good prep will make or break your job. Sand and prime well.
2: Depending on what paint you use, it can take weeks for it to fully cure. Curing is beyond drying, as it can be fully dry to the touch for weeks and still be scratchable. Now that my paint is fully dured (months later), it is very hard to scratch by hand. This includes the clear coat....
