The AAC files from the iTunes Music Store are MPEG-4, but only the iPod (or iTunes) can play them back as they are encrypted. You can, however, burn them to CD then re-rip to MP3. You may lose a little quality, but you can do what you want with the files.

I love it, and it keeps my iPod well fed.
But I do love iTunes, it's great to be able to browse all my mp3s with one program, WinAMP would die.
