I'd load up MS streets and trips and find a few low density population spots in CA and try to link them together for a 1200 mile trip, then set out to do it in one day.
If I didn't have to work during the week I'd be up for joining you, that's just my idea of a good time.....

More like 530 miles, lots of time on the interstate but you could easily get your 1200 in a day that way.

Here you go, round trip from Hayward, 1199 miles, S&T says 25 hours, I think it can probably be done in 20, (averaging 60, Interstate no problem, Highway 1 ?????) but it would be a challenge.

Thing is, half of the state of Utah used to be under Lake Bonneville so there are "bonnevilles" all over the place.
The salt flats are only a small part of the old lake bed, and the only civilization within 100 miles is Wendover, so mapping programs should target Wendover.
Depending on what time of what day you hit it, averaging 60 on a lot of 1/101 is possible with a few shots where you can cruise comfortably at 80 or more.
But you are right that some sections (like Leggett to the coast) can only be done at 30-45 by most of us.
Coming back down 5/505 from Yreka loses you about 300 miles....
