I think I'd keep it much lighter and less serious than taking her to some expensive restaurant. I'd suggest simply asking her what kind of food she's in the mood for, find something casual, then maybe some pool, bowling, or some activity you can have fun with.
I wouldn't go rock climbing on the first date, unless you're SURE she has no fear of heights, etc.

try some ethnic foods. Small romantic places.
if you guys know each other well enough to know it won't be a disaster what about going for a drive. Head out to santa cruz. Go to a small cool restaurant. I can recommend a few. Then take a walk on the beach..or say along capitola's little walk way and drink a cup of coffee.
makes for a good 4 hour trip and lots of talk time. You won't look like a pompous rich guy and you might get lucky on doing something a little different. And you might actually learn something about each other.
or you could find out what kind of food she likes and pick a hip spot to go.

do NOT spend a ton of money on this date or have huge elaborate plans...
you will look:
desperate
controlling
insecure
just go someplace that has a variety of things to do and just go with the flow. absolutely do NOT go to a movie. this will lead to disaster. first dates are for talking and crap, not awkwardly sitting next to someone you don't know for 2+ hours.

Thanks for the replies and advice so far. I'm going to take your advice and find somewhere else to eat.
I know that she enjoys Santa Cruz, so I heading down there could be fun. So OneManArmy, if you could recommend a good place to eat in SC that would be great!
I am definitely staying away from going to a movie. Since we are still getting to know more about each other, things where we are able talk are good.

There is a little italian restaurant...has like 8 tables in it. Right next door is a wine bar. For the life of me I can't remember the name of the place but it's friggin awesome. If it's busy you can sit in the wine bar and they'll come get you. Highly recommended. I'll get you the name.
That would be my recommendation. Get some wine. Get some food. Then walk over to Mr. Toots for some coffee and walk the coast there. Few places to sit. Awesome place.
Bring jackets....and I'd advise tossing a blanket in the trunk just in case.
Pretty sure Mr. Toots is still there for coffee. I used to go there a lot but I don't spend much time in Capitola these days.
if you want to drive around you could go downtown. Hit up Kianti's...decent Italian Food on the budget. Then walk around. Maybe go to Marianne's for ice cream.
Restaurante' Italiano.
Cafe' Mare or something like that...good italian food down town.
other places to consider in santa cruz.
Star Bene
Theo's
Bittersweet Bistro
Bocci's Cellar
Cafe' Sparrow
Chao Bella
Black's Beach Cafe'
The Crepe Place
give me a budget and a kind of food and I'll hook you up.
Star Bene is one of my favorites. I haven't been to Bocci's but I here it's AWESOME...and very small...sheshe..etc.

low key. laid back. options. You need to be able to bail if you want and so does she.
Hip spots but not too dollars. not to cheap.
usually have back up plans...several restaurants. Ice cream/coffee after...etc.
Or if it's going good you got the drive ins in santa cruz....haaa.
There's another restaurant down in capitola I hear good things about. Parking right up the road and it's right next to mr. toots. I'll get the name of that one too.

Rosie's is alright. Some of the weekest irish food I've ever had. I'd rather go to the brit in soquel.
clouds is cool.
I love running around the boardwalk games. Little ghetto and dirty down there. But it's fun. Plus they have tons of picture booths.
