check out www.dpreview.com for a review of the specs for the cameras. The D70 is comparable to the Digital Rebel in price and if I recall correctly is a better camera than the Digital Rebel. If you are looking in the $1600 range, the Canon 20D is a better camera than the D100.
Since you are starting from scratch, you can't really go wrong with either. You should also consider the price of lenses. I personally think Canon has better lenses. It's hard to beat the L glass but they are also more expensive than their comparable Nikon counterparts. Another thing you need to consider.
I am looking into getting two lenses with the camera. The EF 70-200 2.8L and the EF 28-70 2.8L. The price for the lenses is about $1500 and $1200, respectively. Don't forget to add that to the price of the camera. Plus you are going to need to buy memory cards.

I paid $799 from bestbuy about 6 months ago for my Digital Rebel and Lens(although I could have done without the lens), plus I got 15% off of the accessories I bought(bag, a few filters, extra battery, and a 1gig 10x sandisk CF card) I use a Tamron 28-300mm lens and a canon 580ex flash, and couldn't be happier. I still use my old Elan for B&W photos because as good as the rebel is, it doesn't top a high speed B&W film.

Nothing, just not a big enough focal length for me. The Tamron 28-300mm is about the same dimensions(closed) as the canon 18-55mm, although is it heavier than the canon, canon is 6oz tamron is 14oz. With 300mm I can reach out and touch someone, although I think 200mm would have been enough, 300 pushes the boundries and it's hard to take a good picture without a tripod at that zoom. The canon 18-55 with a 2x tele extender is tolerable, but still not quite enough zoom for my tastes. Although if I had a bit more money I would have rather gone with the canon 28-135mm IS(image stabilization) lens(only 18oz) with a 2x tele. With image stabilization it makes it much easier to take low light pics or long zoom and keep them sharp. The canon 28-300mm IS lens is REAL nice, one of my friends has one, but it's HUGE, almost 4lbs and it's 8"s long closed.
It's hard to get the best of all worlds. I find that with the 28-300 I rarely feel the need to change lenses. The focus is slower than the canon which gets on my nerves sometimes, but the less lenses I have to carry with me the happier I am. I rarely brigng anything more than the tamron, my camera, and a flash even though I own about 10 different lenses.
I was dragging my feet for ages stepping up a real digital camera, I had a nikon 775 before that, but best buy had $100 off of the digital rebel, then another $100 if you got their card, plus 15% off 4 or more accessories when you buy a camera. So I signed up for their card, got all my toys, promptly paid it off and cancelled it
10 minutes of my time for another $100 is fine with me.

Any chance you have duplicates of those lenses you'd like to sell me? hahaI think I'd be happy with just the wide angle and the telescopic lens. Do you have any recomendations for those? I'm planning on getting the rebel too. but I don't know if I want that lens it comes with.
