Oh yeah, forgot to mention...I love doing night/low light/weird light shots, so what other equipment might I need besides a light meter and tripod to have well exposed pictures?
I quickly browsed the Costo website as suggested by one of the above posts...and I think they had a D40 bundle for $599, but I first need to research and try out couple dozen cameras
I think the first thing that you need to figure out is, what make of camera do you want. IE Nikon, Cannon...ect
Then you can narow your search down to just those. Take your time, and really get a good feel for the cameras. K and S rents cameras and lenses for a pretty good price. You might want to think about doing that for a couple of the cameras your really thinking about getting, that way you can go out and use them like you normaly would use your camera. Just an idea.

Thank you for you continuing inputDamn, these cameras have a ton of options, almost gives me a headache
...I feel as if many of these are like those BMW M-cars, where you gotta spend an hour adjusting all the gearbox/suspension/differential/engine/etc setting before you can even take off

Again, I apologize if this is a n00b question...but what would be pros/cons of Nikons, Cannons, etc? Like do they work for certain type situations or lens preference better than the other? What do I need to look for/compare in DSLRs to figure out which brand is for me?

I think it all depends on your budget! As in under $1500? Under $2000, etc? I had to sell some car parts to get the SLR I wanted within my budget which wasn't huge. So far I got a Canon Rebel 450D/XSi with the kit lens 18-55mm IS lens, and picked up a Canon EF 70-300mm f/4-5.6 IS lens, some filters, and a bag for under $1200. I love it, but I'm a nooby. But noob or not the picture quality is great. Of course if I could have afforded it I would have went with the next level up like the Canon 40D or the newer 50D, but I am thoroughly satisfied with my pics.
As for Nikon vs. Canon, I think you can't go wrong with either choice. You'll get all kinds of pros/cons from folks, but in the end it'll be another personal preference.

^^ agreed. Nikon vs. Canon would turn into a huge thread about how one is better than the other. Try them out, see what YOU like and what YOUR compfortable with. My fiancee shoots Nikon and my best friend shoots Canon. Both say good things about eachothers cameras but they both are just more comfortable with there own.

LOL...it really boils down to preference, for me its just because I've been using Canon since the beginning. Canon lenses are also interchangeable on some of their 3 Chip camcorders (XL1, XL2). I personally think you will be fine with a Canon Rebel XSI along with the IS kit lens or one of the Nikons that other posters are recommending.

This fits within your budget click on XSi bundle:
http://www.costco.com/Common/Category.aspx?cat=1236&eCat=BC|79|83|1236&whse=BC& topnav=&hierPath=79*83*1236*&lang=en-US
The 70-300 isn't great, but it's something untill you get a few more pennies!
Also on Amazon with just the kit lens (free shipping, no tax, I think):
