be careful to have a fan pointing outwards of ur garage. that stuph STINKS!

for the rear diff, if you jack up the car, i believe there are two bolts there... the top one is where the fluid goes in, the bottom one is where it comes out. 
for the transmission, there's a monster bolt near the back on the engine (under car) that drains the transmission fluid. you pour it in right behind/under the intercooler. easier with a funnel with a long long nose...
