Any home brewers here?
Got a question for y'all.
How does one know how much yeast to use when brewing?
Say I go to make a gallon of mead, how do I know how much yeast to use for the 2lbs of honey? Or will they multiply until the sugar is gone and then die off?
I imagine the more yeast the quicker it will start the process, the less yeast the longer it will take correct? Is there anything other than sugar that yeast needs to live?

I would assume a specific wine yeast would be best, but would most baking yeasts work?
IE hit walmart, get the yeast from the baking isle.

I hope your joking right? BAKING YEAST??????? please dont ever use baking yeast, it will ferment but it will taste like **** for years to come, go to a quality homebrew store or go online and buy 2 packets of Lavlin EC-1118 champaign yeast. Part of using different strains of yeast is the flavor profile it creates. But unless you want to ruin your batch use baking yeast.

When I was about 13 I took a gallon of apple juice dumped in some baking yeast and sealed it up tight. left it in the garage for about 8 months and bam! one sick teenager! As buckeyemike75 said, please go to a home brewing store and get some real yeast.

Baking yeast isn't that much different than beer yeast, beer yeast is just more refined through Darwinism for the process. Baking yeast also has the alcohol tolerance of a Canadian. For mead just got to the brew store and pick up some champagne yeast. That'll get it nice and dry and crisp.

"Double Fists to the Sack IPA" just pegged 8% ABV and will be starting the first round of dry hopping today.
I got kind of distracted with a girl that came over on brew day, so this beer didn't get any hops besides bittering hops at 60 min
And it is based off of a stone recipe so it has like 180 calculated IBU's

Been drinking my beer and surprisingly its pretty damn good, everyone likes it, but its hard to kill 50 bottles with a pregnant wife who cant help :P So if anyone wants a few free beers your more than welcome.
Actually got motivated a did a few things recently, bought a 8gal brew kettle, outdoor propane burner, and a wort cooler. Cant wait for the next batch.
For fun did this today:

1 gallon of Pomegranate Mead...thought I would give it a try.
