Engine/Power - non turbo (All non turbo Imprezas) Who needs a turbo when you have 2500cc? Cams, intakes, exhausts, etc. The 2.2L and 1.8L Subies are cool too.

If you had 500 dollers. What would you do to my car?

I would personally go for a lightened flywheel, but then you'll probably want to also do the clutch since you're down there and that'll put you over $500.

Satellite radio? I love mine and have pretty much the same mods + some on my 01 RS.
Or if you don't really dig that maybe some sway bars? Front/Rear with bushings/droplinks. That'll probably run around the neighborhood of $500.

Man...if I had $500 why would I spend it on your car?
I have a hard enough time getting $500 to spend on mine

I'd go with a short throw shifter (if available for the 2.5RS), maybe some better brake pads....or just stash the rest away after the shifter for the next "Gotta fix it" problem.

I'd agree with Redstage on that one.

Short throw shifter or new brake pads, or even stainless steel hard brakelines.
Fuel injectors? HID lights?

Go have fun researching on the many things you can do :P
