Stock 205's wanting to move to 215's?

none of the 215s will end up at the correct diameter as the stock size and IMO what little traction that would be gained by a wider tread would be outweighed by the height differential and the bellying of the sidewall.
IMO the 205s are nearly a perfect tread width for the 16x7" RS wheel. If I were going to change tire size I would consider a 205/50-16 before one of the 215s

I dunno if this helps you at all, 'cause I drive a 2002 WRX sedan...but, I'll post it just in case (sorry, I'm not real good with tire info).
I DO know, however, that I changed to 225/50/16 Kumho Ecsta MX's with no problems. Traction both wet & dry are excellent, especially compared to the stock RE-92's. It helped immensely on cornering as well. I think my stock rims are 16x7 as well. The tirerack rep I talked to said the 225/50's were good for even a 6.5" wide rim. There is a little bulge, but not TOO much.
As I said, I dunno if it helps you or not, but hopefully it does!

I have a 2001 RS, and my favorite tire size for the stock wheels is 205/50R16. 225/50s aren't actually much wider than 205/50 Potenza S03s. Most other high performance tires are the same way. Just don't order 205/50 for an Impreza- say they are for a Civic Si or something.
