Could you explain what comes in a kit please. Does it include the flywheel and / or any bearings? What else would we need to buy to do the install?
Also I am interested in the difference in feel between the two clutches and the OE one. Is it true that the organic disk has a lighter feel than OE, and is the cerametallic one much heavier in operation than OE?

These include everything needed for the install minus the flywheel. You are probably going to have to get your stock flywheel resurfaced if you are going to replace your clutch. I can offer you a option of adding a lightened flywheel to the package for an additional $400.

The organic disk gives you a lighter pedal feel even though you are applying 27% more force at the pressure plate. Cerametalic shouldn't be that much different except it's designed to withstand more heat that would be found in racing situations.
