IMHO, 5W-30 is too thin for Subarus. I find even 10W-30 thin as well. Subaru recommends 5W-30 to get the best gas mileage, while I'd rather have a small hit in gas mileage for the added protection of my motor.

Many people love Mobil1, which tends to run thin, so you're already running a thin 5W-30 with a thinner 5W-30 Mobil1 than other same rated oils. I just did the same thing as everyone else, until my motor blew. After that, I did my research, and talked to a few shops. Overall, I found most shops also don't recommend using 5W-30, nor do they recommend using synthetic oil (as that runs thinner as other same rated oil weights as well). You'll find if you ask around, a lot of people are adding a quart of oil ever 1k miles!

While I may be running a much thicker oil than what other people recommended, in using Rotella-T 15W-40 oil, I have never had to add a drop of oil between oil changes, and it's specifically built for Turbo Diesels (to me, a plus, since we're running turbos) while passing all the tests for normal unleaded engines.

Just my .02
