Fuel injection service usually involves attaching a piece of equipment that injects a special solvent into the fuel rails while the engine is running. This process cleans the fuel injectors of varnish deposits that may accumulate after many miles of use. I think this type of service may be more beneficial than even a high-quality additive like Chevron Techron added to the gas tank, but is not as good as removing the fuel injectors and sending them to a place like RC Engineering for thorough cleaning and flow-matching.
I haven't checked the factory maintenance schedule so I don't know when or if fuel injection service is required for our cars.

My answer as posted on NASIOC-
It's something you don't need, if a dealer or shop is trying to sell it to you. They typically add this to their service menu to boost their profits.
Unless the car is not running properly and there is reason to believe that the injectors need cleaning, there is no use for this service. The detergent additives in most gasolines are sufficient to keep the fuel system clean, unless you are regularly using incredibly cheap gas. So, as long as you are filling up with good quality premium and change the fuel filter per the maintenance schedule, you can save your money on this.
This is NOT a required service from Subaru.
