oversteer off because it will prevent you from oversteering too much and running off the course
same thing for understeer, preventing you from understeering off the course.
if you leave anything on it'll slow your car more than it normally would with it off.
i find forza on the xbox to be more of a 'drift' game as seen here

i think enthusia racing takes it all. the problem with it is that you can't customize the cars... but i've been watching people using the DFP2 wheel and it's much more realistic as opposed to GT4's crazy snap under/over steer.

i don't remember the exact settings but i'm still tuning it ... this was set up for apricot hill...

port polish
eng balancing
custom LSD
triple clutch
race flywheel
Turbo stage 2
race intercooler
Stage 1 weight
brake controller
N2 tires
enkei wheels
spring rate f 9.0/ rear a few clicks from softest
ride height 98/106
shock bound 6/6
shock rebound 3/2
stablizers 5/2
camber 1.7/0.3
toe 0/+3
brake balance 4/16
LSD
intial 18
accel 31
decel 5
it may benefit from more weight reduction. the turbo stage 2 makes it very peaky and it burns out pretty easy in the top of 2nd gear. still need to figure how to get more grip in the rear. perhaps if i went weight stage 3 i can just go with the turbo stage 1. but as soon as you get it sideways it's all throttle control to adjust your angle
