Anyone knows where I can get wood chips for smoking? I'm looking for mesquite chips to be exact.

I guess japanese supermarket? I saw those (if what I saw is what you are referring to) in the san jose location.

depending on the size, i roast the outside on high for 5-10 min to get a good crust going then reduce to low to medium low for the remainder of the time. flipping every 10 min or so until cooked to your liking.


if you do get a meat thermometer, i would suggest getting this kind.
its good because you can have the prong in the meat with the gauge away from heat.

as for bbq chips, bbq's galore is a good place to go. i used it a few times for smoking steaks, you soak the chips in water for about 30 min before tossing them into the pit.
