Not much... You could go with a piggy back, but it gets a bit complicated.

Would running the stock one be better than the grimmspeed? Is the stock controller sufficient to increase boost and tune?

No, the grimmspeed will allow for better control and better response than the stocker.

The EQ Custom Flash (OECU) is just a different method of achieving the same tunes. The $175 is just for a base map. The complete custom tune is still $400 for most setups.

so can you do your tunes on an AP as well? i have an AP but people say its a waste if im going to get tuned but i like being able to load up my tune anytime i want how does that work?

Yep, I can tune with or without the AP.

With the AP, the tuned map will get loaded to the AP as well.
