how to shut off alll wheel drive and make it two wheel drive.

For automatic transmission equiped cars, you can disable AWD by removing a fuse. Consult your owner's manual.
For manual transmission equiped cars, there is no way to disable AWD.

GO back to the dealership, sell your car and go find a 2wd car, maybe a monte carlo, or perhaps a mustang. Then you will have the 2wd you crave

cant you take out driveshafts and replace a differential?

yes you can
there are RWD Impreza done by taking out front axle and replacing the center diff to STi locked diff.
