good eye! When I talked to him he said his VIN would run a clean title. I'm wondering if the VIN is off a clean 04 but this is a rebuilt 05?

Sorry to say, but there's something fishy here. The car in the pics is clearly an 05. There are some things that you simply could not of changed from an 04 to make it appear like an 05. For one, the rear fenders on the 05 have the extra trim on them, this was not on the 04 and you would need to drill the 04 and put an 05 bumper on. See:

Notice that on this 04 sti pic there are no flares on the rear fenders.

The second thing is back to the interior. You could not have swapped the interior unless you swapped the e-brake mechanisms as well. In an 04, the e-brake is on the right side of the center console, on the 05 (yours) its on the left side. See:
