Greg, I'm with Jeremy on this one. Subaru motors are put into VW's, but usually it's Vanagons since they are OBD-I and are already water cooled. I've seen many and have tinkered with a few. In your case just get another air-cooled motor and you'll be set. They're cheap and parts are readily available, oh and they're cheap and a novice can work on them If you do go this way I know some VW guys that I can send you to for parts and what not.
